In some cases possibly also French (mainly Haute-Savoie): nickname for someone who was able to whistle in imitation of birdsong, to attract and catch birds, from Old French sublet ‘whistle, hiss’. History: This surname (see 1 above) is listed in the (US) National Huguenot Society’s register of qualified Huguenot ancestors (along with the variant Sublette) and also in the similar register of the Huguenot Society of America.
